Ingredients

1 tablespoon olive oil (or water)
1 diced brown onion
3 crushed cloves garlic
3 cm piece of grated ginger
1 tablespoon berbere spices
1 cup red lentils
2-3 cups vegetable stock
2 chopped tomatoes
1/4 cup tomato paste
Salt and pepper to taste

Directions

On high heat, warm up the oil in a large pot.
Add and saute the onion for 2 minutes. Then, toss in the chopped tomatoes, red lentils, tomato paste and vegetable stock and boil for 5 minutes.
Reduce to medium heat and simmer the lentils for 20 minutes or until desired tenderness. Season with salt, pepper and serve.
